Overview

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Serves: 4

Ingredients

  • 8 chicken thighs, bone-in and skin-on

  • 750g baby potatoes

  • 2 red onions, cut into wedges

  • 2 carrots, sliced

  • 3 tbsp marmalade (such as La Vieja Fabrica Thick Cut Marmalade)

  • 2 tbsp wholegrain mustard

  • 1 tbsp olive oil

  • 1 tsp thyme leaves

  • Salt and black pepper

Method

  1. Heat the oven to 190°C fan.

  2. In a small bowl, mix the marmalade, wholegrain mustard, olive oil and thyme leaves.

  3. Place the potatoes, red onions and carrots into a large roasting tray. Season well with salt and black pepper, then toss.

  4. Arrange the chicken thighs on top of the vegetables.

  5. Brush the chicken generously with the marmalade glaze, reserving a little for later.

  6. Roast for 45–50 minutes until the chicken is cooked through, the skin is golden and crisp, and the vegetables are tender.

  7. Warm the remaining marmalade slightly and brush over the chicken during the final few minutes of cooking for an extra glossy finish.

  8. Remove from the oven and leave to rest for 5 minutes before serving.

  9. Serve straight from the tray with seasonal greens, buttered cabbage or a simple green salad.

Having reliable cookware on hand makes simple traybakes even easier. A non-stick, heavy-gauge roasting tray will evenly distribute heat so your potatoes turn beautifully crisp, while a heat-resistant silicone pastry brush means you can evenly brush the chicken with sticky marmalade without damaging the skin. A quick-read digital meat thermometer is the must-have, last-minute cheat for juicy chicken thighs cooked through without burning the sweet citrus marmalade.
