Orange upside-down cake recipe
Overview
Prep Time: 25 minutes
Cook Time: 50 minutes
Total Time: 1 hour 15 minutes
Serves: 12
Ingredients
300g butter, softened
250g caster sugar
2 oranges; thinly sliced
2 blood oranges; thinly sliced
4 eggs
300g plain flour
150g ground almonds
2 tbsp cornflour
2 tsp baking powder
100ml milk
Method
Preheat the oven to 180°C | gas 4. Grease a 24cm springform tin with 50g of the butter and sprinkle with 4 tbsp of the sugar, tipping to coat the base and sides.
Arrange the orange slices in the tin in a rosette pattern, slightly overlapping, placing the blood orange slices in the centre.
Beat the remaining butter with the remaining sugar until pale and creamy. Add the eggs one at a time, beating well after each addition. In a separate bowl, combine the flour, ground almonds, cornflour and baking powder. Add the dry ingredients to the batter alternately with the milk, stirring gently until combined.
Pour the batter over the orange slices in the tin, spread level, and bake for 50 minutes until golden brown and a skewer inserted in the centre comes out clean.
Remove from the oven and allow to cool for 10 minutes. Turn out onto a wire rack and cool completely before serving.
