Carrot, pear and cranberry spiced eight-grain muffins recipe
Overview
Prep Time: 25 minutes
Cook Time: 35 minutes
Total Time: 1 hour
Serves: 12
Ingredients
1 ½ tsp baking powder
½ tsp bicarbonate of soda
150g golden caster sugar
350g carrots (grated)
1 pear (grated)
1 tsp cinnamon
70g vegetable oil
4 eggs
90g milk
80g dried cranberries
50g rolled oats (plus extra for sprinkling)
Pinch of fine salt
Demerara sugar (optional, for sprinkling)
Method
In the bowl of a stand mixer fitted with a paddle attachment, weigh out all the ingredients except the additional sugar and oats for sprinkling. Preheat the oven to 190 degrees Celsius.
Mix for 5 minutes on the slowest possible speed to avoid developing the gluten too much - you’re just looking for all the ingredients to be fully mixed together.
Divide the mixture into 12 muffin cases, and tap the tin gently on the worktop to level the mixture. Sprinkle each of the muffins with the oats, then the demerara sugar (if using).
Bake for 30-35 minutes or until well risen and golden brown on top. A skewer inserted into the muffin should come out clean. Allow to cool fully before enjoying!
